I threw this easy pasta dish together the other day, and it turned out delicious, so I had to share. I was given some garden veggies from family and wanted to use them up. I love pasta, so I decided to make a healthy pasta dish. It didn’t take long to make, and it is easily customizable to fit whatever veggies you happen to have on hand. I had a lot of zucchini and mushrooms, so they are what I used.
pulled rotisserie chicken
penne pasta (I used gluten-free rice noodles)
1/2 cup of olive oil
2 tbsp basil
2 tbsp Italian seasoning
1 tbsp garlic salt
1 tbsp sea salt
- Saute veggies in a frying pan with olive oil and sea salt.
- Cook and drain pasta.
- Combine pasta, veggies, chicken, olive oil, and seasoning.
- Good when topped with parmesan cheese.
- Tomatoes and spinach would also make good editions.
