3 Ingredient Pumpkin Muffins

These are a fall favorite in our family! The muffins are so incredibly easy to make, and they taste like a pumpkin spice latte in muffin form. I like to keep the ingredients on hand in the fall and just whip these up when we’re planning on having company over or are just in the mood for a fall treat. My picky toddler even loves them – which says a lot!

Ingredients:

  • 1 package of yellow cake mix (I use gluten-free)
  • 1 15oz can of pumpkin puree
  • 1 tbsp of pumpkin spice

Recipe

  1. Mix ingredients in a bowl.
  2. Place mixture in a muffin tin.
  3. Bake for 20 minutes at 350 degrees.

One thing I love about these muffins is how moist they are. You can use a 29oz can of pumpkin puree if you like your muffins super moist. You can also use a can of pumpkin pie filling instead of plain pumpkin puree if you are feeling extra festive. You can even add or take away some of the pumpkin spice depending on your preference. Adding chocolate chips can take these muffins to another level as well!
