They are especially handy for parents! My kids love these, and I like to make egg bites ahead of time and then just pull them out in the morning for their breakfast. It is so much easier to just grab these out of the fridge and stick them in the microwave than to cook eggs every single morning. It’s such a time-saver!

I also like them for my work breakfasts on the go. They are easy to bring with me to work and then just heat up for a quick breakfast or lunch.

My egg bites are incredibly easy to make and are a dupe for the Starbucks egg bites. I make them simple so that my picky toddlers will eat them, but you can add bacon, sausage, or veggies to yours. Just put whatever you would like in the bottom of your cupcake tin and then pour the egg mixture on top.

Easy Egg Bites

Ingredients
  

  • 9 eggs
  • 1 1/2 cups cottage cheese
  • 1 tbsp sea salt
  • 1/2 cup cheddar cheese

Instructions
 

  • In a blender, combine eggs, cottage cheese, and sea salt.
  • Pour the egg mixture into a cupcake tin.
  • Top with shredded cheddar cheese.
  • Bake at 350 degrees for 25 minutes.
