Easy Garden Veggie Pasta

I threw this easy pasta dish together the other day, and it turned out delicious, so I had to share. I was given some garden veggies from family and wanted to use them up. I love pasta, so I decided to make a healthy pasta dish. It didn’t take long to make, and it is easily customizable to fit whatever veggies you happen to have on hand. I had a lot of zucchini and mushrooms, so they are what I used.


2 zucchinis

chopped mushrooms

pulled rotisserie chicken

penne pasta (I used gluten-free rice noodles)

1/2 cup of olive oil

2 tbsp basil

2 tbsp Italian seasoning

1 tbsp garlic salt

1 tbsp sea salt


  1. Saute veggies in a frying pan with olive oil and sea salt.
  2. Cook and drain pasta.
  3. Combine pasta, veggies, chicken, olive oil, and seasoning.
  4. Enjoy!


  • Good when topped with parmesan cheese.
  • Tomatoes and spinach would also make good editions.
