I happened to have a lot of crumbled feta cheese and fresh spinach in my fridge from a Greek salad dinner and wondered what other Greek themed dishes I could make with the leftover ingredients. I decided on these spinach and feta turkey meatballs, and man were they good! I ate them by themselves, but they’d also be good with tzatziki sauce on pasta. Enjoy!
Ingredients:
- 1 pounds ground turkey
- 1/2 cup crumbled feta cheese
- 1 cup chopped fresh spinach
- 1 Tbsp parsley flakes
- 1 egg, beaten
- 1 cup breadcrumbs (I used gluten-free)
- 1 teaspoon onion powder
- 1 teaspoons sea salt
- 1 teaspoon pepper
Recipe:
- Preheat oven to 400 degrees.
- In a bowl, combine all ingredients and roll into meatballs about 1 inch in diameter. Place the meatballs in a greased baking dish.
- Bake 25 to 30 minutes or until meatballs are done.
